Overview
In April 2021, Aoibheann Calley opened Puck Burger, a food truck that serves a variety of local and seasonal delights. Puck Burger is one of five food trucks in the Picnic Park, in Malahide.
After several months working from the Picnic Park, Aoibheann noticed that the bins were not being used properly and the bills had gone up with her waste management company. Around the same time, Aoibheann was approached by Amy, the founder of Conscious Kitchens in their shared co-working space to discuss Conscious Kitchen’s zero-to-landfill offering.
For Aoibheann, there was uncertainty around how zero-to-landfill would work in an area with communal bins. “I thought tackling our bins would take a lot of extra manpower and time.” said Aoibheann, “In order to achieve this we needed buy-in from the other food trucks as well as our valued customers.”
In order to educate Aoibheann and her team about the zero-to-landfill journey, Conscious Kitchens headed straight to the bins.
After a thorough inspection, sessions around more efficient ways of working with food, problem solving around signage, and waste reduction tactics in the kitchen were held. Within just a week, Puck Burger was able to build an awareness around what was going into the bin on a daily basis, and why.
Solution
After the initial inspection, Aoibheann was able to address the unnecessary waste being created through Conscious Kitchens ‘stop, start and continue’ guidance. Aoibheann was able to understand the true cost of waste to her business, and cut her costs in half and entirely eliminate her black bin.
“It is all about balance,” says Aoibheann, “we serve the best Irish produce to our customers and it is important we maximize these quality ingredients. To complement this we want to be confident that we are having a minimal impact on the environment including the stunning marina where we are located.”
